Hosta seeds actually mature and grow differently than other types of seeds. Unlike many other plants you do not want to break off the dead part of the plant where the flower once was. The fertile hosta plants grow pods that are oblong in shape and green in color. These pods are grown where the flowers used to be. However, this takes a very long time to happen, sometimes weeks all the way up to months in time. So, being patient is vital. You will know when the seeds are growing because the pods will begin to enlarge and grow.

As stated above the fertile hosta pods start off a green color. As they mature and ripen they will begin to turn yellow and then brown. Both the pods and the stems the pods are attached to will change color. This is how you will definitely know that the hosta seeds are ready to harvest. The pods will begin to open up and at this point you are able to retrieve the seeds from inside.
Now that the hosta plant is ready to have the seeds removed you will want to take the stem with the pod still attached off of the plant. Put these stems with the pods on a tray or plate of some sort, you will need to let these dry out for a few weeks or so. They should not be in direct sunlight during this time. Wherever you store them during the drying out process will need to be warm and dry, however not hot. Also, do not remove the seeds, let them dry out thoroughly, during this time the pods may split open further while they are drying out. The pods will become so dry that they will feel like paper to the touch. As they are drying check the color of the seeds. They should be black or brown. If you are seeing seeds that are only tan, gray, white, or only part of the seed is brown and the rest is discolored, then you know that those seeds are not fertile. Just throw these seeds out, they will not grow hosta plants.
Remember, there is no way to rush the process the hosta plant must go through to produce fertile seeds. You can’t speed it up and you just have to be patient, because every plants length of time to make fertile seeds will be different. It can take weeks to months for the plant to go through the process. Picking the stems and pods too soon will render the seeds infertile and worthless. A lot of wasted time and effort will happen if you try to rush your hosta plant. So, sit back and wait for your plant to produce the pods and for the pods to change color, it will be well worth the wait.
Lastly, not all hosta plants make seeds. Depending on the breed and the plant itself, some are infertile and do not create fertile seeds and pods. Watch your plants and you will know which are fertile. Also, some hybrids do make seeds while some non-hybrids do not. There is no way of knowing until they flowers and die and then you will just need to watch the plant to see if there are any pods that develop and the color of these pods.
